Broccoli Souffle
serves 4

Ingredients

Instructions

  1. Sauté the chopped onion in butter until tender. Add the flour, stirring until smooth, then cook while stirring an additional minute. Gradually add the milk and cook over medium heat, stirring constantly until thickened and bubbly. Season to taste.
  2. Combine the cream sauce, egg yolks, broccoli, lemon juice, and goat cheese, and set aside.
  3. Combine the egg whites and cream of tartar, and beat until stiff but not dry. Fold the mixture into the broccoli, then spoon into a lightly greased 1 1/2 quart casserole.
  4. Place the casserole dish in a Bain-Marie and bake at 325 for 40 minutes.
  5. Plate and serve
